Raw Materials
The British poultry industry produces some of the best chicken carcasses to be found worldwide. This is because of the prevalence of air chilled poultry and the freshness of carcases slaughtered and deboned in the same plant. Raw materials for the manufacture of MDM, such as chicken or turkey carcasses, are sourced from a number of leading poultry producers with whom KRS enjoys long standing supply relationships. The focus upon quality begins with the raw materials, each consignment being thoroughly examined for compliance with recognised quality standards. The results of these checks are diligently recorded to provide a valuable database of raw material characteristics.
Production
KRS utilises state of the art machinery to separate meat from bone and produce MDM. Throughout the production process the product exhibits the bright pink colour and texture of good quality MDM. After separation, the MDM is pumped into a mixing vessel to produce an even distribution of fat and protein. It is then instantly cooled through a heat exchanger before packing in polythene. The packs are then dropped into plastic moulds which produce poly blocks of consistent size and shape. The MDM is then rapidly frozen in a fully automatic plate freezing system using liquid CO2 refrigerant at -45°C. The freezing process takes less than 2 hours and the plant has a weekly capacity in excess of 1000 tonnes. After freezing a robot arm builds the poly blocks on to pallets according to customer specification.
Packaging And Presentation
At KRS we recognise the importance of effective packaging to retain the quality and security of the product during transportation and storage. For our local customers we are now able to offer the option of delivery on plastic pallets ensuring easy compliance with EU meat hygiene regulations.
Coldstorage
In readiness for dispatch, finished goods are held in our own on-site cold store. The cold storage facility is maintained at -22°C and has capacity to hold around 1000 tonnes of finished product.
Shipment
According to customer preference we offer our products for sale on an ex-works and delivered basis. We can offer worldwide delivery by road, sea container and railway section, as appropriate, in association with a range of reputable transport and logistics companies.
Controls
At KRS we observe full HACCP procedures and process documentation. A highly trained and experienced Quality Assurance team test our products at every stage of the process. All our products are metal detected during production and bacteriological testing is carried out in our own on-site laboratory. These checks and records provide full material traceability and ensure that all legal requirements are met. Our plant currently operates under official veterinary supervision from the United Kingdom Meat Hygiene Service. Export health certificates are available for shipments outwith the EU according to prevailing United Kingdom poultry health status.
